I've been having trouble finishing bigger guys, one guy in particular.
Im 155 lbs and he's at least 190 lbs. I manage to take his back a lot or get into a fairly solid armbar position but I just can't seem to finish him. He's very defensive so after I take the back I have 30 seconds or so before he gets out or tightens up to the point of me giving up. I have time to work, I just can't get the finish because he's a bigger guy.
Something similar happens with armbars.. I have time t break it but I just can't break it in time, he's pretty strong so regular breaks dont work in time.
Size and strength play a lot into this as I think we're technically pretty close, but he usually gets the better due to size and strength. I need help!
Big guys love getting choked. Stay away from the locks.
But if they are too big, forget the subs. Just smash and stay on top.
Where are you training? You are not going to out-muscle him, so your best bet is to be as active as you can, be patient with your subs, and wait for a mistake. That is what smaller guys who are better than me do with me. Check your PMs man, come train with me!

smash on his neck/face w/ the severn choke hold... just be a mean prick..... bow and arrow though.
i'm 240 or so and am usually bigger... i'm built like a barrel... there is a 155lb. fellow brown belt that is a better wrestler and jiu jitsu guy than me... he breaks me down w/ constant movement from side to knee ride to mount... constantly moving and smashing neck... if he gets the back it's bow and arrow time... all day... crank away w/ severn and get that grip.

Armlocks can be pretty quick and sneaky - however with my basic understanding of them there is only a small window for them and at really unexpected times - this could result in them not tapping soon enough and getting a bit butthurt when they have to yell out to tap.

Kneebars are hard to get vs. bigger guys. The legs are strong, and if you miss a kneebar, you often get smashed.
I would keep going for back takes and armlocks. I particularly like armlocks from back control - easiest setup there is, IMO.
Also, the North-South choke works well against people all sizes, but takes time to master.
Like said earlier bow and arrow choke FTW.
Once you've got the lapel and leg, if he's not tapping bring your legs up and crank it.
With bigger guys, you have to move (i.e. use you faster speed/reaction time vs. his size/strength). You have to get a step or 2 ahead of him (the generally can stop attacks from you get only 1/2 step ahead). Use their reaction/defense to your attack against them (e.g. when you attack RNC, they defend but give you their arm).
I recently shot a clip for my academy with a training partner who's 100 lbs. heavier than I am. Granted I have much more training experience (have been BB for 6 years, he's good purple) but he's also bit younger. Perhaps some of the transitions will help you (there's also a no-gi clip):

These clips were supposed to be flow rolling, but when the camera came on, it was sort of on:) It wound up being a pretty realistic training session.

I rarely try straight armlocks with bigger / stronger fellas.
I will attack Kimura's becuase a lot of the big strong dudes just aren't too flexible and they seem to tap more quickly to them.
And like someone else said -- chokes. Head arm chokes are great if you can get in position. Nothing like nice large shoulder to use against them on their neck.

kimura can get you in trouble since it's a reciprocal position (he can get one on you). However the arm bar attempt itself sets up a lot of things... back take, flower sweep to bow/arrow choke, and puts everything in perfect position for wrist locks...There's a lot of details in how you block his elbow and how you grip his wrist that can really improve your success.
