Anyone use a water smoker?

I"m thinking about getting an insulated vertial water smoker either from Lonestargrillz or even a Myron Mixon smoker.  Yes they are expensive as hell but I think might be worth it.  I tasted a food truck BBQ locally who use the large Mixon water smoker and its some of the best I've tasted.

Anyyone with experience?

I have a large BGE and was considering getting another one for more capacity and for competitions.  However, transporting a BGE is tricky and can break the components.  A large water smoker attatched to a trailer solves this.  They weight 800 pounds so even on rollersr I'm not getting it up a ramp on a trailer if it's seperate

I have a large BGE and was considering getting another one for more capacity and for competitions.  However, transporting a BGE is tricky and can break the components.  A large water smoker attatched to a trailer solves this.  They weight 800 pounds so even on rollersr I'm not getting it up a ramp on a trailer if it's seperate

I have only done one professional competition. I won 5th out of 15 but I was the only one man team with my single bge. Even for small caterings though I find I need at least another bge. A brisket straight off the pit is amazing but only mediocre if you have to bag and refrigerate overnight. I often do multiple meats and hate having to do it ahead of time. It works fine to refrigerate pulled pork but does not work well with brisket and ribs. A large capacity smoker built into a trailer would allow me to travel the competition circuit as well as take on any size catering with ease.

Oh you cater as well. Nice. I've been upgrading my home systems, and had a lot of luck finding good deals on craigslist. Maybe you should also look there? A good deal might make the choice easy.

Well, I say catering.  I don't have a business.  But it's not unusual for me to do 4 meats and 7 sides for a gathering of 40 to 50 people.  That's a lot of work and coordinating since I have no help and have only one Big Green Egg to do it on. 



One thing I've learned for doing large groups is to double my estimate on everything.  If I think I need 12 hours, I really need 24.  if I think I need "X" pounds of meat, I really need "2X" pounds.



I will likely go with the Lonestar since the heat diverter is separate from the water pan.  The Mixon diverter is the water pan as well.  So if the automatic water fill doesnt work, you warp your pan and hurt the cooker.  It also costs more because Mixon is on TV and is charging a premium because of it.   I still want to go to his 3 day school though.
