I am considering betting on Jon Jones, but I am a bit nervous with his toe injury not being fully healed. Does anybody know how the payout works? This is my first time betting and I dont know if it is worth it.

That would mean to make 100$ you would have to get 800$.
The only way that's worth it is if you parlay him 
If he is -800, then the question you have to ask yourself is "Will Jones win this fight 88.9 times out of 100?" If you feel comfortable that he will, go for it

I have 2 parlays, one with Jets +13 against New England (got that right already), San Diego +8 against Eagles (got that right) + Mitrione, Barao and Khabib and another with Barao and Khabib

If you bet you might as well go all in, you can bet the same amount yet make multiple times more money simply by playing your cards right
No. Put money on Pat Healey instead. 
Bet on him winning inside the distance. The only guy he didn't finish since he's been the ruthless killer that he is was Rashad and that was because he had too much respect for him. He finishes Gus, and the payout is wayyyyyy better than -800 straight up. Don't pick by TKO or by Submission though, because you could never tell with Jones.
