I've looked around online and have only found a couple of them. One is at Worlds Gym but theres no website for it, the other is also in the central valley but theres no real info on the instructors (ie; what belt they are in bjj, who they trained under, etc)

there's a group out there called CRFights.com that occasionally streams MMA fights from Costa Rica. Email that website. Someone over there might be able to point you in the right direction.

Tamarindo is beautifull. I was there in Feb. Nice beaches and good surf around.
And another nice cities there in Guanacaste is Flamingo and for Surf, Playa Grande.
