Because there's a long MMA history of guys who are great strikers with almost no grappling beating guys who are great grapplers with almost no striking?
Especialy when the grappler is one of the best athletes the world has ever produced, and the striker was good enough to play a few games of professional football.
Unless you mean, if Karelin wanted to get knocked out then he would - that I believe. I doubt that Karelin would want that though.

It's not like Sapp picked guys apart standing, He bumrushed much smaller guys. Karelin would get the chance to clinch with his eyes closed, and I'm gonna go out on a limb and say he'd get the better of the grappling.
