I agree that it’s debatable whether he “looks for a way out” once things are going very bad on the ground. But other than that debatable point, just come on, get real.
As far as Mayweather, who never will get in the Octagon calling him “Conor McTapper” or Khabib who doesn’t exactly seem to be pushing for a rematch (saying Conor needs 10 wins before he faces him again) but says “Conor tapped like chicken”, this shit is just trash talk by opponents trying to get a mental advantage. Let’s not be fooled here.
And I fucking despise Conor. I definitely think he has and continues to look for the path of least resistance to get to his big opportunities. But a coward? Definitely not.
Conor obviously isn't a coward, he looked for the nate rematch right away and is looking for the khabib rematch as well, if he was a coward he wouldn't be looking at getting back in there with fighters who beat him up and choked him out.

Technically he did defend against Aldo as he won the interim belt against Mendes. If Khabib's win against Conor or Usman's win against Colby was a defence, Conor's should be counted too.

Conor’s refusal to defend has never appeared to be from cowardice. As you say, he was willing to fight RDA when RDA was a terminator. In hindsight, I still think Frankie was a tougher matchup. But, nobody, including me, would have said it at the time. I think Conor got bored after winning titles and defending didn’t motivate him.
However, you are wrong. Khabib wasn’t the interim champion, he was the champion. Conor had been stripped of the belt. When Conor fought Aldo, Aldo was defending, not Conor.

He took the fights that paid the most money, what does that have to do with being a coward.
Although I despise this, and it speaks directly to the fact that UFC title holders are not necessarily the "best" fighter in each weight class, It is absolutely the correct answer to the question. Why defend a title when you can get paid so much more to fight a guy who isn't a #1 contendor? It's also a smart move on the promotion's part. Their cash cow keeps his belt, win our lose, and they make a shit ton of money off of Conor's non title fight. Plus they can continue to promote him as a "champion".
Again, I don't like the answer, but it's the right answer. Definitely doesn't make Conor a coward.
