This was one of the best events ever. Watching Overeem get starched by Shogun was great.
Randy vs Tim Sylvia.
Hands down. I'll never forget it. 
KOTC Ireland/Gurgel was excellent, the crowd was relly loud and into it.
Whole Pride 33 card was great, especially Diaz/Gomi

Diaz v. Daley for me, but it probably had to do with the fact that I had great seats in the first row of non-media/VIP right behind Gil (who came out to watch after his fight).
Not really a "coolest" fight but I did enjoy Brock v. Kim because I was hyped to see Lesnar fight MMA.
Karo and Fickett was a war.
I woulda said Fedor/Hendo if Fedor won :-(
Coolest fights I've seen live were smaller circuit fights.
