I would have to go with Igor. Back in the day he was an absolute wrecking machine. My dream match was to see him and Vanderlei stand toe to toe.

Igor Zinoviev (scared the shit out of me and, along with Donny Fryie was one of the first guys I remember beating a bjj black belt)
Frank Shamrock (the first truely well-rounded MMAer who beat many tough fighters above his weight class)
Saku (doesn't really need explanation)
Hendo (probably the single toughest fighter in the sport thus far)
Anderson Silva is right now my favorite fighter to watch compete. So right now that's my answer.
