Hendricks carries a much largest BF% than most when not fighting, while a guy like Frankie Edgar is ripped most of the time.
If this is the truth, train and eat right until you are at an effective weight to compete. An obese person would have to fight at heavyweight/absolute right?
I am 6'1 210lbs and at 17% bodyfat. If I were competing I would want to be at 170lbs or 185lbs to be as competitive as possible....knowing my frame, most likely 170lbs. So this would include me losing some muscle, fat, and water.
The best thing you could do is become fit and figure it out after that. That goes for competition and your overall health. Take a look at the Dolce Diet, Atkins diet...maybe even Fat Sick and Nearly dead(long story short, juice diet.)
