I was having a huge craving for pancakes.. knowing that they are just a bunch of carbs I was sadly thinking I'd have to wait until cheat day ... until...
I checked out my "body for life" cook book! Low and behold... protein pancakes..
Golden Pancakes:
1cup uncooked whole-grain oats (non instant).
6 egg whites.
1 cup fat-free cottage cheese.
1/4 tsp vanilla extract.
1/4 tsp ground cinnamon.
2 packets sugar substitute.
1/2 cup sugarfree maple syrup.
1/4 cup mixed berries.
Lightly coat a nonstick skillet or griddle with cooking spray; place over medium heat.
In a blender, combine oats, egg whites, cottage cheese, vanilla, cinnamon and sugar substitute. Blend on medium speed until smooth, about 1 min.
Pour batter, about 1/4 cup at a time, onto hot skillet. Cook pancake until bubbly on top and dry around edges, about 3 mins. Turn and cook other side until golden brown, about 2 more mins.

They turned out awesome and my pancake craving was satiated. :)
Hmmm.... I'm questioning the cottage cheese. Even though I like cottage cheese, I'm having a hard time with it in those pancakes. lol... I would try them anyways though.
Cottage cheese isn't so bad if you blend the hell out of it to change the consistency. I can't deal with the regular "chunky bits" consistency. Nuh-uh.
