Cultural variety is part of cooking. The ability to cook many types of food is not only desirable – its expected from skilled cooks. Then if you can use influence from many cultures and create your own versions of dishes, even better.
The traditional differences are largely geographical anyways. Why do Mexicans in Baja cook a lot of seafood over mesquite???
