If MMA ever becomes a high-paying sport, then most prospects will probably do this, i.e. follow the boxing model of building up a perfect record against tomato cans who have a less than 1% chance of winning. An undefeated record is marketable, and consistently fighting opponents with even a 5% chance of winning can quickly drop the chances of having an undefeated record to less than 50%. Better to fight any opponent with a pulse in the big leagues.
