Hunchy's Easter Sunday roast beast pic and recipe

Top sirloin with a large fat cap untrimmed. Rinsed and dried. Dusted liberally with salt and set aside for half an hour. Lightly pat dry again, careful not to remove too much salt. Freshly cracked pepper and coriander. Put in a pan of my homemade veggie stock as a jus base. Seared at 550 for 20 minutes then roasted at 375 for an additional 30. Internal temp in the middle is 128. Perfect rare.
