Do the instructionals on there actually solve real jiu jitsu problems or is it just to see who can post the most complex absurdity
^Yes! It drives me crazy when they don't demo the technique first. It lets you know what the technique is beforehand so that you can decide if that's what you were looking for. It also gives you context so you know where the technique is headed as you hear the details explained. Sometimes, I'll be 5 minutes into a video and the person still hasn't completed the move once. I don't understand how it happens so rarely.
Regarding Instagram, I think until recently there was a max video length of 30 or 45 seconds (it's one minute now, I believe). So not a lot of time to explain something or give details. I'm fine with a short and sweet video there.
But with Instagram, you have the ability to upload multiple videos/photos per post. So you could have the demo as the first video, then swipe to see a short video on one of the details, swipe again for another video on a different detail, etc. It's an interesting format that I don't see many posters there experimenting with it.

yeah… In this case, if it captures a detail that I notice, I like the way that it’s just 15s replaying over and over automatically… It’s like visually drilling in your mind.
I’m still wondering when someone’s going to release a video demonstrating how you get your opponent to lay on the mat like a dead fish while you execute a 37 step berimbolo, leg drag, mounted, heel hook, collar choke.
i’m just happy to see less idiots doing berimbolos in stores, doing spider guard on statues, arms locks in water etc

Most of the Instagram Bjj videos I’ve seen are very good. There is a Carlson Gracie Black belt (Saporito) who post some excellent videos. JJ Machado post some good stuff. The Mendes brother also post some good stuff as well (although it is their style)
