Like many of us atheists, I really dont think Joe gives a shit.

It seems like the proportion of fighters who are devout enough to believe their wins are due to God/Jesus is vastly higher than the general population.

I think fighters believe in God at a higher rate because having a higher power to pull strength from can keep you going even when what you're doing is fucking insane.

He is saying that without the inner peace of his God he could not make it through the rigorous training. He is thanking God for his health. He is thanking God for his life. He is pronouncing the glory of God in what should be his own glorious moment. He is reminding himself and others that at this most amazing moment in his life that he realizes that he is nothing without God.
Have you ever seen a fighter thank a mother or a coach? Did that mother or coach enter his body and force the win? No he won with his own skill, strength and determination. He is saying he could not be where he is at without his mother and coaches.
