Byers explains them and he comes to some "crazy dice" he has on his hand he got because he ko'd a MMa fighter at a ufc event in vegas, "the guy kept saying "do you wanna roll the dice old man?" and I ko'd him at the Hard rock Hotel"

Did he say MMA fighter or UFC fighter? If he said MMA fighter, then it's possible it was some tough guy scrub who talked shit. But if he said UFC fighter, then it either did not happen at all, or some tough guy scrub claiming to trane UFC.

Byers might be an old drunk at this point in his life, but if he connected a punch on Maynard he would be sleeping for sure. Byers was a legit heavyweight enforcer in his day, just had way too many off ice issues.
