inspired by BJ Penn Forever's Scrapple thread, i picked up some Goetta on the way home from work
unless you live within maybe 100 miles of cincinnati, you probably aren't going to find it. if you do, its next to the breakfast sausage. basically, Goetta is a poor person's way of stretching meat to feed more people just like meatloaf. in this case, it's sausage made from beef, pork, various organ meats, oats, onions and herbs/spices.
here's the local way to do it up:
start with two farm eggs:

cut your goetta ("jetta") into 2.5 x 2.5 x 1/4 squares and throw them on a hot skillet:

let one side brown ENTIRELY before you flip them. you'll only want to flip them once:

build your stack on some toast -- in this case, soda bread. top with spicy mustard and/or red pepper jam:

shoot for over-medium on the eggs so you get just enough of that runny goodness:
