The UFC roster is being pushed to its limit to accommodate all of these cards. The result is seeing 1 or 2 relevant match ups with the rest of the card mainly being filled with mid-card fighters coming off losses or making their debuts. If you're looking for quality, these are not the events to look at.
That said, it's a free on a Wednesday night, so if you already have Fuel you probably aren't sacrificing much by watching it. If you aren't familiar with any of the other names on the card and don't care about them, just watch Munoz/Weidman and Beltran/Te Huna. A lot of people don't watch an entire boxing undercard either.
As far as the main card itself, Munoz/Weidman is obviously the most relevant fight on the card. The winner could potentially be fighting Anderson Silva. Te Huna/Beltran should be violent. Njokuani/Dos Anjos is good fight between two legitimate LW's. Dillashaw/Lee should be entertaining at least.

You're talking about Muñoz vs Weidman? That card looks alright in my opinion.
First off Muñoz Weidman will be a great fight. It's been a while since Muñoz has last fought but when he did he absolutely dominated Leben. Granted Weidman's last outing was a disappointing decision victory over Demian Maia but he took that fight on short notice, I can't wait to see Weidman take on one of the best middleweights in the world. This fight is an important one for the middleweight division.
I can't wait to see James Te-Huna fight again, he is an absolute killer and always exciting to watch. It's great to see Beltran get another shot in the UFC, this time at LHW which is the weightclass he belongs.
Excited to see Aaron Simpson make his WW debut. He could be an exciting addition to the divison if he performs well.
Vaughan Lee is a good fighter and is exciting to watch. It will be interesting to see how he handles Dillashaw's grappling. I always like to see British fighters do well in the UFC so I will be rooting for Lee in this one even though I think Dillashaw might get the win.
Anthony Njokuani is hardly ever in a boring fight, he is always exciting to watch and has some crazy striking.
This isn't a bad card by any means, OP is wrong here in my opinion.

Its a Fuel card, its prospects/mid level guys and a good main event. Its a chance for guys to get fights, make money and build their stock/name.
You dont care about it then dont watch it. Some people dont like prospects, some only like big names.
