I think it is a timing issue. They will show fights 5 and 4 first, and if those two fights happen to go the distance they may just skip to fights 2 and then 1. Since the two main events are 5 round title fights, they want to make sure they have time for them. I'm pretty sure this happened in one other show. After they showed the main event they had enough time and had the other bout (I think they called it the swing bout). The fight happens no matter what, but if time looks tight they actually make them wait until after the main event(s).

Ok, just my guess.
Your thinking of UFC 73 where KenFlo / Robinson was shown after Silva / Nate since the first 3 fights went to decision including the Sherk / Franca 5 rounder.
what a great card, even Lister vs Okami should be a great fight. Agreed, it's looks weird even having the Dollaway vs Massenzio on the main card with all the more accomplished fighters.

Yep, that's the one. I thought it was a card with Silva on it, but I couldn't think of who was in the fight they showed after.
