I will be in SLC this and next week. Would love to get some training in while I am there. Last time I was out there I trained with some Walt Bayless guys and a Guy named Griffen (sp?) Anyways that was probably 6 years or more so not sure what is available for training.

Griffen is around, but he didn't keep his website up.
The Ultimate Combat guys are decent people to work with. Mike has become the non-political pro-MMA force in the state (he runs the Ultimate Combat Show -- which is on local TV every week).
If you're north of the city then drop by the Mushin Self Defense school. The best clinch work and some of the best submission work in the state. Quite possibly the best Muay Thai as well. The Mushin guys are BJJ/Shooto(CSW)/Muay Thai and are doing extremely well in local MMA competitions.
And if your downtown or on the east side then the Fusion BJJ guys are inside the Muay Thai institute. Not everyone is a fan of their gym, but they have a great facility.
Rob Handley has a nice school (He's a Behring BJJ blackbelt, a Judo Brown belt, and the classes are small enough that you'll get decent attention).
