Smoked Chicken(pic)

Best chicken I ever made. Cooked low & slow on indirect heat for about 2 1/2 hours sitting on a beer can with garlic/lemon/beer/onion/herbs mix turning every half hour or so for even cooking & a crispy skin. From the vids I've seen this doesn't really steam the chicken but the manner in which it is sitting down creates some slow roasting goodness.

The key was not how I cooked it, though. It was how fresh the bird was, amazing. Try to get a whole chicken unfrozen/fresh, that goes to say for any cut of meat but especially bird(chicken/turkey).
