Aged for 240 days????  Holy shit, I have never heard of beef being aged for that long.

Steak only starts to pick up flavor around 30 days.  Really gets going at 60- 90 but the flavors are pretty strong and are not for everyone which is why. Very few steak houses age past 30 or so.

Pescadero needs to post some of his legendary steak meals. Sabroso!

This thread worked. Off to get a filet mignon for lunch.

So if you buy say 20 NY steaks and you're going to eat one or two a week would you just keep them in the fridge instead of freezing them? Or is that not how you would age a steak?
