TFK Assemble! Tiger Sauce!?

So... I worked at a place called Copelands in the early 2000's and we had this stuff called Tiger Sauce. 

 

Honestly, I have no idea what it was, but it was a milky, pinkish-white sauce.  It was tangy and amazing.

 

So, fast forward to yesterday and a guy is telling me about his "secret" recipe for pulled pork (Amazing how many people part with their secret recipes when you work in a restaurant), and he mentions dressing his sandwiches with Tiger sauce. 

 

But what I find in a bottle is not the same stuff I had back in the day.  furthermore, there are limited Tiger sauce recipes on the internet.

Anyone have extensive experience with this amazing sauce?

 

And can I have your secret recipe???

I asked my chef and he said the exact same thing.  At least I have a base.

 

So far I have found 3 variations-

 

1.  Mayo, vinegar, horseradish, lemon, salt, pepper, minced garlic.

2. mayo, horseradish, sugar, Tabasco, garlic

3. Pickled cherry peppers, tamarind, garlic, marsala, dry sherry, vinegar, horseradish, cayenne

I usually just make it with Mayo(has to be best foods or Helmans if your east of the Rockies) horse radish, diced garlic, lemon, black pepper, little cayenne n pappys... So good on a Tri Tip Sammy Phone Post 3.0

I think my uncle up in Santa Maria uses a mayo/sour cream combo. Phone Post 3.0

I think I'm going to combine the two recipes I have and make an "aioli".

 

so first I'll simmer down the cherry peppers, tamarind, Sherry, and vinegar.  then I'll blend it and mix it in with the mayo, cayenne, horseradish, garlic, and lemon.

I learned all about simple from you, so I will definitely try your way.  But the cherry peppers and tamarind combination is intriguing to me.

I do mayo n tapatio... But that's for artichoke dip. It's gotta have horseradish IMO that's the lynchpin Phone Post 3.0

I actually use lemon juice, but I was going as simple as possible. I'll try the lime juice/zest, thanks! Phone Post 3.0
