Hollywood Blonde - NO NO NO; it became illegal in the UFC after one of the early events. I can't remember who used it . . .
you are incorrect. it is legal in the UFC and has been used many times in the past couple of years. check the foul list if you don't believe me.
You are not supposed to apply pressure and choke. If it's legal now, that's a reversal of an earlier rule against it.
When Erickson used it to win his fight, we all laughed because no one had realized that it was still legal in Pride/K-1.
I see. You're getting hung up on it being called a "choke". In this case, they aren't actually using it as a choke, they are using it to hold their opponent's head in place for strikes. I believe as long as you aren't gripping the trachea with a pinch it is considered legal though, even if you are putting a good amount of pressure on. Some of these guys are clearly leaning way into it.

Well, yes, I am, for the specific reasons you mention! It is funny, though: does it currently say anything in the Unified Rules about the illegality of pinching the trachea?

Don't feel like going through the unified rules, but here is the summary of fouls from wikipedia:
11. Throat strikes of any kind, including, without limitation, grabbing the trachea.
The trachea is a fairly small central portion of the front of your throat- it seems that as long as you aren't pinching the trachea itself, and rather grabbing around the jugulars and neck muscles, it's legal. Just like wrapping your forearm and bicep around the throat for RNC.

There you go. I still wish I could remember after what early UFC it was banned and what fight (if any) was the reason for it. My mind keeps telling me Tank Abbott, but I think that's because of that photo that circulated years back of Tank rape choking a grappling dummy while holding a gun to its head.
