Jones vs Gus I was one of the great UFC matches, beautiful fight. No finish. Chuck vs Wandy, Canelo vs GGG, and a million others, the same.
A finish can also be beautiful, but for me, only usually if it is part of the narrative. Fury vs Wilder III. Lennox vs Tyson. Anderson vs Chael etc.
Fights were it’s just finishes, can be fun or not. But, the style, the rhythm, and the narrative of the fight, is that which makes it great, and memorable.
