I know Jake Shield's went full vegan, I think it was before the Ellenberger fight.
I would never go vegetarian. My body couldn't handle not eating any animals...

The book everyone needs to read is "The China Study" by Thomas M. Campbell. The dude did intense research on the intake of animal proteins and its link to growing cancer cells.

Yes I also recommend to read to the China study because it's an unbelievable load of bullshit and fact manipulation. From a academic point of view it's a terrible study that presents handpicked statistics and biased analysis that serve Dr. Campbell's own agenda.
For more info about critics towards the study, read this for example. There are tons of other critical reviews available as one would expect.
i agree with elias, meat vs veg is less important than the overall quality of your diet.
i don't fight, but train bjj. i have been meat eater, vegetarian, and now vegan. the difference in my performance has been zero. however being vegan has improved many other aspects of health from my digestive system, to my skin and body fat.
do research before changing your diet to make sure your body gets what it needs. if you cut out meat your going to need another good source of protein. many people become "vegetarian" but dont actually eat many vegetables, just more pastas and breads... then curse vegetarianism when they get sick of fat.
