Vinegar based BBQ sauce, TME

What is this stuff? I keep hearing about this but I don't think I've ever had it. Around these canadian parts, BBQ sauce is thick and the consistency of ketchup. Is vinegar based sauce totally liquid like pure white vinegar? What are some good recipes to try and make myself and what's the best application of sauce like this? Dipping? Slathering?

Coastal style is just vinegar and spices, man. It’s fucking DELICIOUS.

Inland style is sort of like coastal style cut with ketchup.

It’s still vinegary as fuck, but it’s a little sweeter.

It’s good, but it’s not as good.

For pulled pork, Carolina Style bbq is the only way to fly.

For coastal style, you pour it all over the sandwich (it’s runny as fuck), and then you dip if need be.

Understand, this is for pulled pork sandwiches. If you’re talking like brisket or chicken or sausage or something (AKA, “Not barbecue” this is not for you).

Recipe for eastern= cider vinegar, red pepper flakes, black pepper, cayenne pepper, salt.

Some people will tell you sugar.

Fuck those people.

Boil it. Refrigerate it. Shake before using.

vinegar based doesn't have to be bad, but the carolina is horrible. In western new york we have a vinegar based bbq called chiavettas. it's fucking heavenly. 

we call it a marinade though--not a sauce.

There's also a mustard sometimes called gold Carolina sauce. I prefer that over Eastern Carolina or the ketchup/vinegar based.

I like Alabama more than any other. An Alabama made with Famous Dave's Devil's Spit as a base is awesome.

I tend to not like fries that much, but eastern sauce would basically be spicy boardwalk fries.

Gold is my favorite. 

great on pulled pork…

I take some apple cider vinegar, add to it some RC Cola, touch of ketchup, touch of mustard, salt, pepper, garlic powder, a lot of brown sugar, your favorite BBQ rub, Worcestershire sauce, and some red pepper flakes…then throw that on the smoker with my pork…thin tangy sauce…

For this I just go by taste, not too much vinegar, but it will cook off if you make a mistake.

Wow I’d love to try that… I used to formulate sauce recipes for a living and I’ve never had this

Theres like a million different ways to make all bbq sauces.

Vinegar based sauces are pretty much only good on chopped/pulled pork bbq. And pulled/chopped pork bbq, as much as a hate to say it as a Carolinian, is the worst type of bbq. But it can still be very good on a sandwich with a good vinegar sauce.

The sweet vinegar sauces are used as an attempt to make it viable without bread, but it just doesnt work well.
