The heel hook I learned from Tony C's Leg Manipulation Vol. 1 tape from the LAOH series. I catch people with that ALL THE TIME!!!
I am able to get the cross face neck crank (as shown on LAOH) almost everytime someone turtles up on me. It's such a simple yet highly effective technique and if you transition into it as the opponent is turtling he doesn't have time to stop it.
I'd say double wristlock, toe holds, and neck cranks. Neckcranku is right, I've felt his cross face neck crank. It works ;)

I don't remember the name of the move but I also use the bicep/forearm crusher move.
I go for the armlock (the BJJ way), my opponent counters by grabbing his hand, I then switch my legs, place one on my opponents wrist, triangle my legs and put forward pressure.
I always get a tap from that!!!
