I'm sure Helio learned a lot by watching, but it's impossible that he had the timing and technique down without ever training. He had to have spent a lot of time on the mat. If all you had to do to learn was watch something, how many baseball fan would be the best baseball players, ever? Practicing is one of the most important parts of getting better.
