Kaitlin Young was 7-5 when Carmouche beat her. One of those wins was a highlight reel finish against Miesha Tate. As a matter of fact, Young did that on her way to winning a one-night, eight-woman tournament. So not only has Carmouche beaten a fighter with a winning record, she has beaten the winner of a tournament much like the one you described (but twice as deep).
