Maybe if you did it differently for each round. Round 1 start standing. Round 2 fighter A gets to pick top of bottom in the guard. Round 3 fighter B picks top or bottom in the guard. It might be interesting.
I would be curious to see how some of the current group of fighters would do in fights with the original UFC rules. I just can't see guys like Liddell standing in there teeing off on their opponents without breaking their hands. Not to lean toward a grappling mindset too much, but the gloves allow for striking with less concern for damaging the hands. I think starting standing just makes sense either way. JKB
As I was about to get into a fight with a guy I knew had better striking ability than me, so I simply told him that unless he let me start the fight in the mount position, he was a pussy.

I guess his answer to this thread would have been, "No, this would not interest me."
