I recently finished Chuck's book, and thought it was a work of art. A fighter writing his own book. The autobiography approach is way better than through a reporter or writer's perspective.
A book written by Rampage would be funny as hell, and make for great reading. He sold drugs on the streets and went from that being a superstar. Stories of pimps and hoes, junkies and streetfights.
Cro Cop was with an antiterrorism squad, and a member of Croatian parliament. Could you imagine the stories this guy would tell.
Wanderlei, GSP, Forrest, Anderson, Machida, and BJ would all make for great books.

It's just great to read what the fighter actually wrote, without it being minced by some writer.
