Biting, eye gouging, and fish hooking have always been illegal, even in the first UFC. Low blows and headbutts were legal, however
Somewhat modern era UFC, as mentioned... Sims stomping Mir out and Daley cheap shot were probably the biggest offenders.

fishing hooking was legal until Tank/Oleg in UFC 6 if I remember correct.
Randamine's after the bell shots against Holm made the difference in the fight if you axe me.
