I prefer to call them "specialists".

I agree with OP. A bunch of "well-rounded" fighters, or jacks of all trades but masters of none make for boring fights. Often times the match is simply reduced to a cardio competition. I find stylistic match-ups very entertaining.

I also think that the Spaniard makes a good point as well--there is only so much time in life to train, so there are limits to improvement and all-around skill development. Though I have no idea what "quien mucho abarca poco aprieta" means. I put it in Google translator, and this came up:

"whom much covers little squeeze"

I am assuming its an expression equivalent to "more is less" or "don't spread yourself too thin" or some such.
