I'm guessing, look into the UFC or Zuffa's actual business side and talk to an HR rep or see if they outsource their production or assembly staff.

That would be my advice.

Or take ref training classes (im sure you can find some info online, I know BJM has done seminars or a program) and get certified by a AC and go and work your way up to the show.

 I was a judge for one fight, that was fun. After the fight, one of the other judges turns to me and the 3rd judge and says "alright guys, who we picking?" lol. Don't worry, it wasn't the UFC...
