Yves vs Remigijus vs Hominick would be kick ass fight(s).
Yves VS Mork would not be interesting IMO because Yves has a great ground game (submitting Mishima is no easy feat, the guy is very slick on the ground) and would easily submit Mork, who has terrible ground skills.
Mork VS Kid Yamamoto or Jens Pulver would be great imo.
