Wandy/Stann, Hunt/Bigfoot, and Gil/Diego were all insane wars and could easily be FOTY but the implications of the Weidman/Silva fight pushed it to the next level.
Many people thought that Weidman, in his nascent career, didn't stand a chance against the GOAT. Nobody foresaw two rounds of relative dominance which culminated in the most shocking KO at the pinnacle of a champion's hubris. It was the most unexpected result in recent memory. That makes it easily FOTY and the rematch could potentially exceed it before 2014!
Bones/Gus was good but the actual action in the fight wasn't nearly on the level of the wars mentioned before. Jones looked flat and Gus looked good but there were zero knockdowns, etc. Again it was shocking to see a dominant champ get handled but Bones still won and gritted out a fight where he did not look nearly as good as he did in the past.
I disagree with your argument on the same basis as the knockout being best knockout. Yes huge significance but, that doesn't make either the best or most entertaining.

Then he was KO'd while acting like a moron. How does that deserve FOTY over actual back and forth fights with momentum swings?

I'd say easily moment of the year, but definitely not fight of the year. It was essentially a few minutes of Weidman on top of Silva/pushing him against the cage, a few minutes of Anderson measuring him / taunting him / landing leg kicks, and then of course the big moment.
