There is the champions clause in most contracts meaning he has to defend but without a current contract does it just extend the contract as is or does it mean he is held to the previous contract pay until he loses?

Exactly. He is bound for 3 fight or one year, whatever happens first. He can get surgery, rehab, and that year will be over. The UFC shouldn’t have burned the “interim” belt just 4 months after he won the belt, as it would make sense togo for it currently if Francis becomes officially out for a long time.
If he’s out 10 months for surgery it makes it really easy to sit out for one year to get out of champions clause and go to boxing.
Downside is he makes 5-7 or so million and gets smoked. Then that’s it. Vs negotiating for 2-3m a fight and making more long run
