I'll echo Shogun knocking out Machida in the rematch. I thought Machida would easily dispatch Shogun the second time, and was willing to say the first Shogun fight was a fluke...
Watching UFC 3 and seeing the whole Kimo spectacle. Up to that point no one had even mounted any kind of resistance to Royce and a big strong guy with little to no training muscled him around. In hindsight he did very little offensively but at the time it was crazy.
The other thing was Frank Shamrock's first 3 fights in the UFC. He took on Kevin Jackson and smoked him immediately at a time when wrestlers seemed virtually unstoppable (and Kevin had smashed John Lober who had previously beaten Frank). Then I expected a huge showdown with Igor Z and it was over just as fast. Then Jeremy Horn comes out of no where and works Frank over for most of their bout before getting submitted at the end.
When Carwin was smashing Brock in Rd 1. Then when Cain finished the job. Before that Brock just seemed like this monster that no amount of technique could beat.

Someone already said it, and given the benefit of hindsight it's not as amazing as it was, but the way Silva handled Franklin in the first fight was shocking at the time
After GSP won the title I thought that he was going to be unbeatable for a long time. He had just mopped the floor with the only fighter to ever beat him and he was just younger, faster, and more athletic than the competition. Well 5 months later Matt Serra dispelled that notion within 3 and a half minutes. Anyone can be beat in this sport on any given night.
Kind of surprised no one has yet to mention Hughes losing to GSP, especially how dominant Georges looked.
As for Serra/GSP I still say the punch that started it hit GSP in the base of the neck. Not intentional as Georges seemed to lean forward but after that he had no chance. To me, not a Santa Claus moment because technically it wasn't a legal hit.
